It is white, odorless, crystalline powder easily soluble in water (20�C,270g/L). It is hardly soluble in organic solvents such as ethanol, i.e. without definite solubility. It is stable under heat, even under moderately acidic conditions. It will not be decomposed unless being heated till the high temperature of more than 225°C.
With high sweet taste, it is 200 times sweeter than sucrose solution of 3 percent.
It has no offensive odor with high solubility in water.
It cannot absorb moisture and is very stable under heat or moderately acidic conditions.
It will not cause microbial fermentation when used in food processing.
